My new favorite salad combo:
Baby Arugula, Baby Spinach and other baby greens
Tomato
Cucumber (if I have one)
Beets (I can’t believe I love them!! I used to turn my nose up to them even though I knew they were so packed full of nutrients)
A little avocado
A few pine nuts
Cracked pepper
Vinaigrette Dressing
