Thai Basil Lettuce Cups

Ingredients

  • any lean protein: tofu, chicken, turkey
  • 1⁄2 cup lemon juice
  • 1 Tbsp chopped ginger
  • 1⁄2 Tbsp red chile peppers
  • 1⁄2 head cabbage, shredded
  • 1 head of lettuce
  • 1 carrot
  • 1 ripe mango
  • 1 handful cilantro
  • 1 handful torn basil leaves
  • sea salt to taste

Directions

  1. Cut the carrot into into matchstick-size pieces. Cut the mango lengthwise into strips.
  2. In a food processor, blend the lemon juice, ginger, chile.
  3. In a bowl, mix the dressing with the shredded cabbage. The best way is to do this with your hands!
  4. Use the lettuce leaf as a wrap, combining all the ingredients within the lettuce cup.
