Beautiful day today at the Berkeley Farmers Market!
Root vegetables like carrots are in season, as are zucchini and squash, so I thought I’d post another RAW recipe using these ingredients. Enjoy!
Raw Zucchini and Eggplant Ratatouille
Ingredients
- 2 small eggplants
- 2 small zucchini
- 1 yellow or summer squash
- 1⁄4 cup chopped olives
- Sauce:
- 2 small tomatoes
- 1 red bell pepper
- 1 sprig of basil and thyme
- 1⁄4 cup dried tomatoes
- 1⁄4 tsp garlic
- 1 Tbsp sea salt
Directions
- Chop the eggplant, squash, and zucchini, then put it in a big bowl and sprinkle the mixture with salt. Let it sit for an hour to draw out moisture.
- In blender blend all sauce ingredients. Ad d a little water, if necessary, but you want a thick sauce.
- Pour the sauce over the vegetables, and if desired, season with additional crushed garlic, paprika, and cayenne pepper.
