Raw Zucchini and Eggplant Ratatouille

Beautiful day today at the Berkeley Farmers Market!

Root vegetables like carrots are in season, as are zucchini and squash, so I thought I’d post another RAW recipe using these ingredients.  Enjoy!

Raw Zucchini and Eggplant Ratatouille

Ingredients

  • 2 small eggplants
    • 2 small zucchini
    • 1 yellow or summer squash
    • 1⁄4 cup chopped olives
    • Sauce:
    • 2 small tomatoes
    • 1 red bell pepper
    • 1 sprig of basil and thyme
    • 1⁄4 cup dried tomatoes
    • 1⁄4 tsp garlic
    • 1 Tbsp sea salt

Directions

  1. Chop the eggplant, squash, and zucchini, then put it in a big bowl and sprinkle the mixture with salt. Let it sit for an hour to draw out moisture.
  2. In blender blend all sauce ingredients. Ad d a little water, if necessary, but you want a thick sauce.
  3. Pour the sauce over the vegetables, and if desired, season with additional crushed garlic, paprika, and cayenne pepper.
