Ingredients
- 1 pound fresh or frozen shrimp
- 2 tbsp white balsamic vinegar
- 2 tbsp shallot, minced
- 1/2 tsp orange peel, finely shredded
- 1 tbsp extra virgin olive oil
- 1/4 tsp salt
- 3/4 cup orzo
Directions
- Thaw shrimp if frozen. Peel and devein shrimp.
- In a bowl, combine balsamic vinegar, olive oil, shallot, orange peel, then pour over shrimp.
- Toss to coat, and marinate in the refrigerator for 1-4 hours.
- Preheat oven or broiler. Remove shrimp from marinade and place on a baking sheet; broil for 4-6 minutes, turning the shrimp once.
- Boil 3/4 cup orzo according to package directions. Plate the orzo, and serve shrimp on top. Optional: garnish with halved cherry tomatoes and fresh rosemary and basil.
