Orange-Balsamic Shrimp with Orzo

Ingredients

  • 1 pound fresh or frozen shrimp
  • 2 tbsp white balsamic vinegar
  • 2 tbsp shallot, minced
  • 1/2 tsp orange peel, finely shredded
  • 1 tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 3/4 cup orzo

Directions

  1. Thaw shrimp if frozen.  Peel and devein shrimp.
  2. In a bowl, combine balsamic vinegar, olive oil, shallot, orange peel, then pour over shrimp.
  3. Toss to coat, and marinate in the refrigerator for 1-4 hours.
  4. Preheat oven or broiler.  Remove shrimp from marinade and place on a baking sheet; broil for 4-6 minutes, turning the shrimp once.
  5. Boil 3/4 cup orzo according to package directions. Plate the orzo, and serve shrimp on top. Optional: garnish with halved cherry tomatoes and fresh rosemary and basil.
