Our one-step summer slaw is a really quick and simple recipe. We especially like its light citrus dressing (lime juice and extra virgin olive oil)– less calories than your standard mayo-based coleslaw. Enjoy!
Ingredients
- 1/2 bag pre-made broccoli slaw
- 2 cucumbers, diced
- handful of walnuts, broken in small pieces (give them a few taps with a meat mallet/pounder)
- 1 small or 1/2 medium avocado, diced
- Juice of 1 lime
- dash of olive oil (about 2 tsp)
- 2-3 shakes celery seed
Optional ingredients:
- 1/2 green apple, diced
- 10 cherry tomatoes, halved
- 1/3 bell pepper, diced
- roasted flax seeds
Directions
- Combine all the ingredients in a bowl, chill in the refrigerator before serving!
