Butternut Squash Soup, with a Kick!

Clean-eating and good combo of veggies, plus a little added kick. Enjoy!

Ingredients

  • 1 large butternut squash
  • 2 carrots, chopped
  • 1 clove garlic, minced
  • 2 red bell peppers, chopped
  • 1 jalapeno, chopped
  • 1 container of organic vegetable broth
  • 1⁄2 tsp cumin
  • 1⁄4 tsp salt
  • 1 tsp olive oil
  • cayenne pepper, to taste

Directions

  • Sauté carrots, garlic and onion in the olive oil. Add all the other ingredients. Bring to a boil for 2 minutes. Then simmer for 10 minutes. Place all the ingredients into the food processer. Put back on the stove to simmer for another 10 minutes.
