A Taste of Tuscany – Best Marinade Ever
Ready for something super delicious and super easy! You’ve got it!
This is a great marinade for chicken, and also could be used for pork tenderloin.
The trick, however, is to prepare it the day ahead so the flavors have plenty of time to absorb – 24 hours is best.
TUSCAN CHICKEN MARINADE
Ingredients
1/3 C olive oil
2 tsp lemon zest (approx. 2 lemons)
Lemon Juice from the 2 tested lemons
3 – 6 gloves garlic slightly chopped
1 Tbs Rosemary (fresh is best!)
Pepper
Thyme (optional)
Instructions
Put chicken pieces (4-6 boneless skinless breasts) in Ziploc bag.
Add ingredients.
Seal bag and squoosh around until chicken is coated.
Refrigerate for 2-24 hours; best if able to marinate for 24 hours for more flavor.
Every now and then squoosh the bag around some more during the marinating time.
Adjust ingredients accordingly for more or less chicken pieces.
For lower fat use more lemon juice and less olive oil
