Crock pot meal day! It’s actually great to do these warm crock pot meals at this time of year; an easy way to cram in my 10 servings of vegetables.
I adapted a recipe I found on Pinterest by adding some chicken. The original recipe says to sprinkle with Parmesan Cheese, I just omit that to make it Dairy Free and Detox Friendly.

My modification was that I diced onion and celery and browned the chicken first in a little olive oil.
Then I added everything else per the recipe (can of organic white beans, can of organic tomato paste (I didn’t have any tomato puree), 1/2 C brown rice, basil, garlic, salt and pepper) But I also grated some carrots and a zucchini to add more veggies and make a thicker stew.
It is super yummy!
