21 Day Detox – Day 20!!!

Yesterday was Day 19, I ran a 5K; which was awesome!!

My husband commented that he is feeling so much better and his joints aren’t aching  Yay!

Last night I made homemade chicken stock and today used it to make Chicken Noodle (gluten free) soup.  Yum!

Dinner was Shrimp Scampi, such an easy dish:  Olive oil, garlic, shrimp, juice and zest of 2 limes, a pinch of red pepper flakes.

Saute garlic in olive oil; add shrimp and turn as it turns pink; add remaining ingredients.  Don’t over cook (no one likes rubbery shrimp).

Serve over rice or gluten free pasta.

SIDE DISH:  Roasted organic colored carrots and fennel.  Chop carrots and fennel and spread on baking sheet.  Drizzle with olive oil; add fresh ground pepper and sea salt.  Bake at 450 for 10-15 minutes; stir once.
