I love the feeling of ACCOMPLISHMENT and also the GOAL to get things done! I did a 3 mile walk yesterday and 2.5 miles today. It feels good to be purposeful about something and follow through.
I’ll share the Chicken and Mushroom Recipe I made last night, it is easy.
2-3 Cloves garlic, minced – 1/2 Onion, chopped
Saute in olive oil until onions are turning translucent
Place boneless/skinless chicken breast and/or thighs in pan, Sprinkle with sea salt, cracked pepper and rosemary. Brown for 3-4 minutes, turn and season the other side, cook for 3-4 minutes.
Turn heat down, add chicken stock and/or white wine to almost cover chicken; I used a combination. Add a cup or so of sliced mushrooms. Cover and simmer for 12-15 minutes.
Serve with Brown Rice. I used brown Jasmine rice cooked in chicken stock.
I made sure to make a big pot of rice because now I can use it for other things this week, also extra chicken. I don’t like to eat the exact same thing two nights in a row, but if I skip a night I don’t mind.
I’m going to have some of the leftover chicken with quinoa salad this evening.
