Cauliflower “Faux” Mashed Potatoes

I have to admit that I love HIDING VEGETABLES in my food and also serving things without telling my friends and family what I’ve hidden. (her hee)

I filmed several videos for eHow.com and one of my favorites is this recipe for Cauliflower “Faux” Mashed potatoes with Goat Cheese.  (there aren’t any potatoes in the recipe!) The goat cheese adds a nice tangy flavor and makes the consistency thicker than with cauliflower alone.

You can serve this as a side dish in place of mashed potatoes, but it also an amazing “base” on a plate to top with a savory main course like Turkey Meatloaf, Rosemary Lemon Chicken etc… (recipes will be posted on future blogs!! check back!)

Ingredients:

1 head cauliflower, chopped into florets

1 teaspoon minced garlic

2 teaspoons butter, softened

1/2 to 1 teaspoon herb of choice (I love Thyme, but Rosemary is also delicious)

1/2 to 1 teaspoon sea salt

1/2 to 1 teaspoon pepper

1/3 to 1/2 cup goat cheese

If you prefer a Vegan option substitute olive oil for butter and use a Vegan cheese.
