Bite Into a Healthy Lifestyle!

I’m super excited about March – it’s almost as much fun as my Birthday Month (which is August) because it’s National Nutrition Month!   

Every March the Academy of Nutrition and Dietetics encourages everyone to return to the basics of healthy eating by adopting a healthy lifestyle focused on consuming fewer calories, making informed food choices and getting daily exercise. The goal is to achieve and maintain a healthy weight, reduce the risk of chronic disease and promote overall health.

The reason I love it is that I want to make it FUN!  You can eat great tasting food, get up and move and really enjoy the breath and refreshment of every single day!

I’m going to be sharing LOTS for recipes and meal ideas with you this month, because that is one of the easiest ways to get started being healthier – try a new recipe.  And I’m not a fancy schmancy gourmet cook – I love to make it easy.

Last night I made a SUPER FOOD side dish that was SO easy! I just threw a few things together!

Butternut Squash, Spinach and Mushrooms

I bought a bag of cubed Butternut Squash, put it on a small baking sheet, drizzled with Olive Oil and baked at 375 for about 25 minutes, stirring a couple of times during baking.

While the squash was baking I sliced and sautéed the mushrooms; added some fresh minced garlic (from a jar), I used olive oil and a little butter to sauté.

I added spinach to the mushrooms until it was slightly wilted and then stirred in the squash added a little  Himalayan salt and fresh ground pepper.

Super Simple – Super Tasty!
